for the te4 controls, i think you should change the default controls of the mac
when i first downloaded te2013, the default for normal and slice are command and control if i remember correctly
however, that makes it literally impossible to play the game. control+arrows, command+control etc. are already shortcuts in macs...
so i think you should remap the default controls on mac for te4

what keys by default would you recommend ? (we have to avoid Azerty/Qwerty issue as well )

well for me, i use x for normal, z for slice, shift for dropshot, and command for lob...

maybe you can find a way to make the w key on azerty keyboard act as a z?

It's possible to do so, but the issue is to know if the keyboard is azerty or qwerty (or something else). There's nothing to handle that in Unity (the engine I'm using).
