In the World Tour mode, I notice that there are several different computer player types, with different animated sprites/movements. Is it possible to change the default sprit/movement to a different one in exhibition/practice mode?

yes, it's possible, and there are 2 types.
To change it, just click on the character in the "Character Sheet" (only available with the full version).
