When playing computer vs computer which difficulty level will be the most challenging in your player climbing the ranks? Incredible, Medium, or Very easy? Or doesn't it matter, maybe there all the same?

It'll be Hard/Incredible, because they're the difficulty levels that give you the less points at start, and make your characteristics lower the fastest over the time, during the game.
I'd advice you to pick the "Hard" level, because it should give more realistic matches (the "Incredible" level is just too strong)


PS: I just put back yesterday the icon to select Human/CPU control in the World Tour...
