I noticed some guys are using return that flies high over net. They use it to avoid ball hit the net when they just just reached the ball. And it's not lob, it's normal shot. How to do it?

it's likely the safe strike, done when no button is pressed ; you can even run in a bit into the ball to give it more speed.

Safe strike is not that high and it's easier to hit for opponent than this return.

It's the tapping shot everybody hits in defense, it's an emergent gameplay technique to defend well. You tap a normal shot button or an accel button when the ball is at its highest and your shot will fly very high and land deep on baseline. It's great to come back when you struggle in a rally!
